Winter Season Fruit Cake

I love this cosy winter season: it allows me to stay inside without a bad conscience and gives me time to work on some new recipes or homemade Christmas presents … and this one I would like to share with you – my winter fruit cake recipe, try it out!

It's really easy to make, super delicious and healthy. It's a perfect last minute Christmas gift but beyond that also highly recommended for all the upcoming winter season.

So go get the ingredients, turn on some good music and start baking:

500 g dry fruits

(plums, apples, figs, apricots, pears, dates – chose the ones you like best! I've mixed all of them…)

2 medium size fresh apples

100 g almonds

150 g walnuts

2 cm piece of fresh ginger (peeled and shredded)

100 g spelt flour

1,5 shot glasses of orange juice, brandy or rum

​ Cut the fruits in small cubes, add the orange juice or brandy and let the fruits soak for 30 minutes.

Preheat the oven to 180°C.

While the fruits are soaking, peel the ginger and the apples and shred with a grater.

Now chop the nuts into medium pieces.

Add the shredded apples, the ginger, the nuts and the flour to the soaking fruits and mix all the ingredients properly.

Line the baking tray with parchment paper, then form small loafs and bake for 40 minutes.

If you store the cake dry and cool you can even keep it for at least 1,5 weeks …

just in case you don’t eat it all at once.
